Job Title: Line/Prep Cook
Job Location: The Railwork Lounge located inside the Raven Inn Hotel in Downtown Whitehorse.
Job Tasks and Responsibilities
Create and follow the prep list for kitchen food preparation and other kitchen related tasks.
Label, stock and rotate all dry and fresh ingredients, keep organized and easily accessible.
Rotate stock following FIFO (First In, First Out) protocols.
All aspects related to preparing and cooking all menu items and their ingredient prep which includes, but is not limited to, organizing and anticipating food prep for today’s service, taking stock of any prep that is required for next shift and ensure as much of that list is complete before leaving at end of shift, notify Lead Cook of ingredients that are low and need to be ordered, washing fresh produce and storing properly, thawing meats and other PHF items according to Food Safe guidelines, cooking, cooling and storing all food items according to Food Safe guidelines.
Receiving food orders as they arrive which includes, but is not limited to, following a HACCP plan for receiving food, meeting the wholesale food delivery personnel even during busy food service, ensuring all food is put away promptly and rotated (FIFO) to avoid spoilage.
Removal of garbage and compostable waste, recycling (including cardboard) and other items in their appropriate bins.
Follow recipes and techniques established by Lead Cook and Executive Chef and in accordance with recipe/plating manual.
Use manual and electric appliances for food preparation according to work safe guidelines and follow the safety procedures or instructions for each piece of equipment.
Work in a team environment to ensure all daily tasks are completed.
Contribute to and complete Daily Kitchen Task Lists and Pass-On list.
Ensure closing checklists and cleaning is complete for all areas in the BOH.
Attend all scheduled employee meetings and offer suggestions for improvement.
Attend training sessions and staff development sessions as requested.
Fill in for the Dishwasher and Prep Cook as required.
Perform kitchen and other related duties assigned by the management staff.
Adhere to all safe work, health and safety regulations while working, and notify fellow staff and supervisors of unsafe work situations.
Maintain up to date food safety certification applicable in Yukon Territory. Employer will provide training if necessary.
Maintain a positive and professional approach to coworkers and customers.

  • Inform Lead Cook and/or Food and Beverage Manager about broken or malfunctioning equipment.
  • Maintain a clean and safe work environment in accordance with the company’s guidelines as well as the requirements of Yukon Environmental Health.
  • Wear kitchen uniform items including head covering.
  • Job environment requires the candidate to lift 50 lbs on a daily basis.
